Steps:
- Preheat your oven to 350°F (175°C). Grease or line a mini muffin tin with paper liners.
- In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, baking powder, salt, and ground cinnamon.
- Stir in the sunflower seeds, making sure they are evenly distributed throughout the dry ingredients.
- In another bowl, mix together the mashed bananas, brown sugar, vegetable oil, milk, and vanilla extract until well combined.
- Add the wet banana mixture to the dry ingredient mixture. Stir gently until just combined. Do not overmix; a few lumps are fine.
- Using a spoon or a small scoop, fill each mini muffin cup with the batter, about two-thirds full.
- Bake in the preheated oven for approximately 10-12 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with a few moist crumbs.
- Remove the muffins from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
- Once cooled, your Banana Sunflower Mini Muffins are ready to enjoy!
Note:Â You can customize these muffins by adding ingredients like chopped nuts, chocolate chips, or dried fruits to the batter before baking.
These mini muffins make a great snack or breakfast treat, and the combination of ripe bananas and sunflower seeds adds a delightful flavor and texture.
