Ingredients
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 2 large super ripe bananas (about 1 cup mashed)
  • 1/2 cup unsalted butter (or normal butter)
  • 1/4 cup roasted sunflower seeds (plus more for topping)
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1/2 cup milk
  • 1/4 to 1/3 cup sugar / granulated sweetener

Steps:
  1. Preheat your oven to 350°F (175°C). Grease or line a mini muffin tin with paper liners.
  2. In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, baking powder, salt, and ground cinnamon.
  3. Stir in the sunflower seeds, making sure they are evenly distributed throughout the dry ingredients.
  4. In another bowl, mix together the mashed bananas, brown sugar, vegetable oil, milk, and vanilla extract until well combined.
  5. Add the wet banana mixture to the dry ingredient mixture. Stir gently until just combined. Do not overmix; a few lumps are fine.
  6. Using a spoon or a small scoop, fill each mini muffin cup with the batter, about two-thirds full.
  7. Bake in the preheated oven for approximately 10-12 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with a few moist crumbs.
  8. Remove the muffins from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
