Yes, you can! At the extraction facility, honey is extracted and filtered through processing equipment made from stainless steel. There is nothing wrong with using a metal spoon to dig into honey for consumption. However, you should avoid keeping the metal spoon in honey for prolonged periods, as honey is mildly acidic and may corrode metal over time.
Liquid honey can be stored outside the refrigerator, but it should be kept in a dark, cool place away from direct sunlight. As for creamed honey, it is advisable to refrigerate it, especially if you intend to consume it over a long period. In Singapore's warm climate, you may notice that creamed honey turns into a runny texture when not stored in the refrigerator. However, the runny texture alone does not indicate spoilage. You can refrigerate your honey to restore it to a firm, creamy texture.
Crystallisation occurs when natural sugars in honey bind together to form crystals, causing the honey to solidify and eventually become hard over time. This is a natural process. If your honey has crystallized, place the bottle in a warm water bath at approximately 35 degrees Celsius and let it sit until the crystals melt back into a liquid state.
Most liquid honey will crystallise, although the time it takes for crystallisation to occur can vary among different types and batches of honey. Some honey, such as Honeydew honey and Pine honey, may not crystallise for extended periods or may rarely crystallise. Creamed honey, on the other hand, is honey that has already undergone crystallisation into tiny crystals, giving it a creamy texture. Therefore, creamed honey does not further crystallise and turn hard.
All honey is liquid in the beehive. Creamed honey is created through a creaming
process in the extraction facility, which transforms liquid honey into a cream-like texture. No additives or other substances are added during this process. The honey is simply left to crystallise and then stirred over time to break large crystals into tiny ones, achieving the desired creamy texture. Liquid honey, on the other hand, is honey that has not undergone the creaming
process.
“Raw honey” is honey that has not been heated or pasteurized. It is extracted from the hive and filtered to remove impurities like beeswax and dead bees before being bottled.
