Ingredients
  • 1 cup of NN organic chickpeas
  • 1 tbsp olive oil, (1/4 cup water)
  • 1 medium onion (minced)
  • 2 cloves garlice (minced)
  • 1/4 cup red bell pepper (chopped)
  • 1 medium tomato (chopped)
  • 1 carrot, diced
  • 1 tsp dried parsley
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 1 tbsp tomato paste
  • 2 cups liquid from boiled chickpeas, vegetable broth
  • 1/2 tsp sea salt
  • 1/4 tsp cayenne pepper

Steps:
  1. In a large pot or Dutch oven, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté for 2-3 minutes until it becomes translucent.
  3. Add the minced garlic and sauté for an additional 1 minute until fragrant.
  4. Stir in the diced carrots, celery, and red bell pepper. Cook for about 5 minutes, or until the vegetables begin to soften.
  5. Add the ground cumin, ground coriander, smoked paprika, and red pepper flakes. Stir to coat the vegetables with the spices and cook for 1-2 minutes to enhance the flavors.
  6. Pour in the diced tomatoes and vegetable broth. Bring the mixture to a simmer.
  7. Add the drained and rinsed chickpeas and diced potatoes to the pot. Stir well to combine.
  8. Cover the pot and let the stew simmer for about 20-25 minutes, or until the potatoes are tender.
  9. Stir in the chopped spinach or kale and let it wilt in the hot stew.
  10. Season the stew with salt, black pepper, and a squeeze of fresh lemon juice to taste. Adjust the seasonings according to your preference.
  11. Once the stew is heated through and the flavors are well combined, remove it from the heat.
  12. Serve the Chickpea Stew in bowls, garnished with chopped fresh parsley or cilantro.

 

Note: You can customize this stew by adding other vegetables you enjoy, such as zucchini or butternut squash. Feel free to adjust the spices to your taste as well.
