Steps:
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the chopped onion and sauté for 2-3 minutes until it becomes translucent.
- Add the minced garlic and sauté for an additional 1 minute until fragrant.
- Stir in the diced carrots, celery, and red bell pepper. Cook for about 5 minutes, or until the vegetables begin to soften.
