  • 1/4 cup hummus
  • 1/2 medium lemon, juiced
  • 1 tsp dried dill
  • 2 cloves garlic (minced)
  • 1 pinch of sea salt to taste
  • 1 1/2 cup cooked chickpeas (rinsed and drained)
  • 1/4 cup NN sunflower seeds
  • 3 tbsp mayonnaise
  • 1/2 tsp spicy mustard
  • 1 tbsp NN raw honey
  • 1/4 cup chopped red onion
  • 2 tbsp finely chopped dill (optional)
  • 1 pinch each salt and pepper (to taste)
  • 4 slices of bread (lightly toasted)
  • sliced avocado, onion, tomato, and or lettuce (optional, estimate to your liking)

  1. In a food processor or using a potato masher, pulse the chickpeas until they are roughly mashed. You can leave some chunks for texture.
  2. In a mixing bowl, combine the mashed chickpeas, sunflower seeds, mayonnaise or Greek yogurt, and Dijon mustard. Mix well to combine.
  3. Add the finely chopped red onion, chopped celery, chopped parsley or cilantro, and lemon juice to the mixture. Stir until all the ingredients are well incorporated.
  4. Season the mixture with salt and black pepper to taste. Adjust the amount of lemon juice and mustard based on your preference.
  5. Taste the chickpea and sunflower seed mixture and adjust the seasoning if needed.
  6. To assemble the sandwich, spread the chickpea and sunflower seed filling onto slices of bread or wraps.
  7. Top the filling with lettuce, tomato slices, and any additional sandwich fixings you like.
  8. Close the sandwich with another slice of bread or wrap.
  9. Slice the sandwich in half and serve!


Note: You can customize this recipe by adding other ingredients like grated carrot, bell pepper, or avocado for extra flavor and nutrition. This filling can also be used in salads, wraps, or as a dip.
