Steps:
- In a food processor or using a potato masher, pulse the chickpeas until they are roughly mashed. You can leave some chunks for texture.
- In a mixing bowl, combine the mashed chickpeas, sunflower seeds, mayonnaise or Greek yogurt, and Dijon mustard. Mix well to combine.
- Add the finely chopped red onion, chopped celery, chopped parsley or cilantro, and lemon juice to the mixture. Stir until all the ingredients are well incorporated.
