  • 1 1/2 cups cooked NN's chickpeas
  • 1/2 cup tahini
  • 1/4 cup lemon juice
  • 1 to 2 tbsp olive oil
  • 2 to 4 tbsp ice water
  • 1 to 2 tbsp extra-virgin olive oil
  • 1/2 tsp ground cumin
  • 1/2 tsp fine sea salt
  • 1 medium garlic cloves, minced
  • Some paprika or chopped fresh parsley to garnish

  1. In a food processor, combine the drained and rinsed chickpeas, tahini, lemon juice, minced garlic, ground cumin, and a pinch of salt.
  2. Pulse the mixture for about 20-30 seconds until the ingredients are roughly combined.
  3. With the food processor running, slowly add 2 tablespoons of ice water to the mixture. This helps to make the hummus creamy and smooth.
  4. Continue processing for about 1-2 minutes, scraping down the sides of the bowl as needed, until the hummus becomes smooth and creamy. If the mixture seems too thick, add more ice water, 1 tablespoon at a time, until the desired consistency is reached.
  5. Taste the hummus and adjust the seasoning by adding more salt or lemon juice if needed.
  6. Once the hummus is smooth and creamy, transfer it to a serving bowl.
  7. Create a shallow well in the center of the hummus using the back of a spoon. Drizzle extra-virgin olive oil into the well and sprinkle with a pinch of paprika or chopped fresh parsley for garnish.
  8. Serve the hummus with pita bread, fresh vegetable sticks, or as a spread on sandwiches and wraps.
  9. Leftover hummus can be stored in an airtight container in the refrigerator for up to a week.
