Steps:
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, diced carrots, and diced celery. Sauté for about 5 minutes, or until the vegetables begin to soften.

- Stir in the chopped spinach or kale and let it wilt in the hot soup.
- Add the heavy cream or coconut milk to the soup, stirring to combine. If using coconut milk, make sure to use the creamy part from the top of the can.
- Season the soup with salt and black pepper to taste.
- Once the soup is heated through and the flavors are well combined, remove it from the heat.
