Ingredients
  • 2 tbsp olive oil
  • ½ medium onion (diced)
  • 3 medium carrots (peeled and diced)
  • 2 stalks celery (diced)
  • 4 garlic cloves (minced)
  • 4 cups chicken stock
  • 400g cooked NN chickpeas
  • 1/4 cup NN quinoa
  • 400g canned diced tomatoes
  • 200g tomato sauce
  • 1 tbsp Italian seasoning
  • 1 pinch red pepper flakes
  • 2 cups fresh spinach (coarsely chopped)
  • 1 ½ cups half and half (or heavy cream)
  • Salt and pepper (to taste)
  • Parmesan cheese (for topping)

Steps:
  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, diced carrots, and diced celery. Sauté for about 5 minutes, or until the vegetables begin to soften.
  2. Add the minced garlic and dried Italian herbs to the pot. Sauté for an additional 1-2 minutes, until fragrant.
  3. Add the rinsed quinoa to the pot and stir to combine with the vegetables and herbs.
  4. Pour in the diced tomatoes and vegetable broth. Bring the mixture to a boil.
  5. Reduce the heat to low and let the soup simmer for about 15-20 minutes, or until the quinoa is cooked and the vegetables are tender.
  6. Stir in the chopped spinach or kale and let it wilt in the hot soup.
  7. Add the heavy cream or coconut milk to the soup, stirring to combine. If using coconut milk, make sure to use the creamy part from the top of the can.
  8. Season the soup with salt and black pepper to taste.
  9. Once the soup is heated through and the flavors are well combined, remove it from the heat.
  10. Serve the Creamy Italian Quinoa Soup in bowls. Garnish with grated Parmesan cheese and fresh basil leaves.
