Steps:
Making the Cake:
- Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or two 9-inch round cake pans.
- In a large bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, cloves, nutmeg, and ginger.
- In a separate bowl, combine the vegetable oil, honey, granulated sugar, eggs, and vanilla extract. Mix until well combined.
- Gradually add the dry ingredients to the wet ingredients, alternating with the brewed coffee. Begin and end with the dry ingredients, mixing well after each addition.
- Pour the batter into the prepared baking pan(s) and smooth the top with a spatula.
- Bake in the preheated oven for about 40-45 minutes (adjust baking time if using round pans), or until a toothpick inserted into the center of the cake comes out clean.
Making the Glaze:
- In a small bowl, whisk together the powdered sugar, honey, and hot water until you have a smooth glaze.
Finishing the Cake:
- Once the cake has cooled for a few minutes but is still warm, drizzle the honey glaze over the top. Allow the glaze to set before serving.
