Ingredients
  • 1 ½ tablespoons olive oil
  • 8 skinless, boneless chicken thighs (or breasts)
  • ¾ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ cup thinly sliced shallots
  • 2 tablespoons water
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon NN honey
  • 1 tablespoon chopped fresh oregano

Steps:

 Preheat the Oven:

Preheat your oven to 375°F (190°C).

 

2. Season the Chicken:

  • Pat the chicken thighs dry with paper towels.
  • Season both sides of the chicken thighs with salt and black pepper.

 

3. Sear the Chicken:

  • Heat the olive oil in an oven-safe skillet over medium-high heat.
  • Place the chicken thighs in the skillet, skin-side down.
  • Sear them for about 4-5 minutes until the skin is golden brown and crispy.
  • Flip the chicken thighs over and sear for an additional 2-3 minutes on the other side.
  • Remove the chicken from the skillet and set them aside on a plate.

 

4. Make the Lemon Honey Mixture:

  • In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
  • Stir in the honey, lemon zest, lemon juice, and dried thyme.
  • Allow the mixture to simmer for 1-2 minutes to combine the flavors.

 

5. Bake the Chicken:

  • Return the seared chicken thighs to the skillet, skin-side up, coating them with the lemon honey mixture.
  • Place the skillet in the preheated oven and bake for about 20-25 minutes or until the chicken thighs are cooked through. The internal temperature should reach 165°F (74°C).

 

6. Garnish and Serve:

  • Remove the skillet from the oven.
  • Garnish the Lemon Honey Chicken Thighs with chopped fresh parsley, if desired.
  • Serve the chicken thighs hot, drizzling them with the lemon honey sauce from the skillet.

 

Note: You can adjust the quantity of honey and lemon juice according to your taste preferences. If you like it sweeter, add more honey; if you prefer it tangier, add more lemon juice.
