Ingredients
  • 3/4 cup raw cashew (crust)
  • 3/4 cup walnuts (crust)
  • 12 dates, soaked (crust)
  • 1 tbsp filtered water (crust)
  • 1 1/2 tbsp chia seeds (crust)
  • sea salt (crust)
  • 3 bananas (topping)
  • 1/3 cup Manuka Honey (topping)
  • 3/4 cup coconut oil (topping)
  • 4 lemons, juiced (topping)
  • 1/3 cup shredded coconut (topping)
  • 1 tsp turmeric powder (topping)

Steps:

Making the Crust:

  1. Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking dish or line it with parchment paper.
  2. In a medium bowl, combine the all-purpose flour and powdered sugar.
  3. Cut in the softened butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Press the mixture firmly into the bottom of the prepared baking dish to create an even crust.
  5. Bake the crust in the preheated oven for about 15-18 minutes, or until it's just lightly golden.

 

Making the Filling:

  1. In a separate bowl, whisk together the Manuka honey, eggs, lemon juice, and lemon zest until well combined.
  2. In another bowl, whisk together the all-purpose flour and baking powder.
  3. Gradually add the dry flour mixture to the wet honey mixture, whisking until smooth.

 

Assembling and Baking:

  1. Pour the filling mixture over the baked crust in the baking dish.
  2. Bake the bars in the preheated oven for about 20-25 minutes, or until the filling is set and slightly golden around the edges.
  3. Remove the baking dish from the oven and let it cool completely on a wire rack.
  4. Once cooled, dust the top of the bars with powdered sugar.
  5. Carefully remove the bars from the baking dish and place them on a cutting board. Cut them into squares or bars.
  6. Serve your Manuka Honey Lemon Bars and enjoy!
