Ingredients
  • 4 cups mixed berries, frozen
  • 4 tbsp NN raw honey
  • 2 tsp vanilla essence
  • 4 tbsp chia seeds

Steps:
  1. Wash and prepare the mixed berries. If using strawberries, make sure to remove the stems and chop them into smaller pieces.
  2. Place the mixed berries in a saucepan over medium heat. If using frozen berries, you can directly add them to the pan without thawing.
  3. Add the honey or maple syrup to the berries, and gently mash the berries with a fork or potato masher to release their juices. You can adjust the sweetness according to your preference.
  4. Let the mixture simmer for about 5-10 minutes, stirring occasionally, until the berries break down and the mixture thickens slightly.
  5. Remove the saucepan from the heat. Stir in the chia seeds thoroughly. The chia seeds will absorb the liquid and help the jam thicken.
  6. Allow the mixture to cool to room temperature. As it cools, the chia seeds will continue to absorb liquid and the jam will thicken further.
  7. Once the jam has cooled, transfer it to a clean glass jar or airtight container.
  8. Refrigerate the jam for at least a few hours, preferably overnight, to allow it to fully set and thicken.
  9. Serve your Mixed Berries Chia Seed Jam on toast, pancakes, waffles, yogurt, or as a topping for oatmeal or desserts.
  10. Enjoy your homemade and naturally sweetened mixed berries chia seed jam!

 

Note: You can adjust the sweetness and the thickness of the jam by adding more or fewer chia seeds. Feel free to experiment with different berry combinations to create your favorite flavor profile.
