PEANUT BUTTER AND CHIA SEED ENERGY BITES

Ingredients
  • 1 cup pitted dates
  • 3 tbsp of salted peanut or almond butter
  • 1/4 cup dark chocolate (roughly chopped, optional - dairy-free)
  • 1 tbsp chia seeds
  • 2/3 cup of rolled oats (optional - gluten-free)

Steps:
  1. Pulse pitted dates in a food processor until they're in small pieces and forms a giant ball.
  2. Add oats, chocolate, chia seeds and peanut butter and pulse until combined. (Be careful not to over-process it, small pieces are fine!)
  3. Using your hands, roll them into 1-inch balls.
  4. Pop them in the fridge for 15 minutes or you can dig right in and enjoy your quick, easy and deliciously healthy snack!
